Last week I was asked what my favorite fruit is. And the scary thing is, I really couldn’t tell!! Here I’m eating tons of fruit every day and I really can’t answer which was my favorite fruit. Ask me about my favorite vegetable and I’d probably tell you it’s spinach or squash, but my favorite fruit… it’s hard! I truly love blueberries, strawberriesAND watermelon. Oh, and let’s not forget cherries! So I put all these fruits together to make this one 4th of July fruit salad.
Of course, I also needed it white stars to make an authentic 4th of July dessert recipe, so I added a little honeydew. I’d probably always prefer watermelon over honeydew melon, but in this fruit salad, I really loved it. Plus, it makes a hell of a star!
I used a star shaped cookie cutter, which I usually only use for Christmas cookies, to make watermelon and honeydew stars. It is best to slice the melons into slices about 1″ thick to do this. Of course, it takes a little longer than cutting them into normal chunks or bites, but it looks so much more impressive and patriotic if you cut them into stars, right?! I am sure this red, white and blue fruit salad will stand out on any 4th of July spread. And it definitely is much healthier of all those versions where tons of Cool Whip are used to look like the American flag. I garnished with some coconut flakes and if you want it to be even fancier for your 4th of July party you could also serve it with homemade coconut whipped cream.
I’m so happy that summer is finally back!! It’s been raining here 24/7 for almost a month now and I’m so tired of the rain. But today was the first really nice day with lots of sun. Tomorrow afternoon we also take a break from studying and head to a nearby lake for a quick swim. And of course I’m preparing a fruit salad to take with us. Unfortunately this beautiful salad is already finished, but I have enough fruit left in the fridge to make a new one. As a child, my mother mostly made us fruit salads in the winter to boost our immune systems, but I also love them in the summer with some vanilla ice cream. Oh, that makes me think that this 4th of July fruit salad would also probably be a… big hit with the kids! Especially if you let him cut the stars. So if you’re looking for something to get the kids to get fruit, this might be the dessert for you. Easy, healthy and delicious!

This 4th of July fruit salad with watermelon, honeydew, cherries and blueberries is not only patriotic but also easy to make, healthy and delicious!

Cut both watermelon and honeydew into 1-inch slices. Then use a star-shaped cookie cutter to cut out the star melons.

Cut the strawberries and cherries in half (leave a few intact to put on top of the fruit salad).

Combine the melon stars, strawberries, cherries and blueberries in a large bowl and sprinkle with coconut flakes. You can also serve this 4th of July fruit salad with homemade coconut whipped cream if you like.
