I’ve always liked apple strudel and I love waffles, so this past weekend I made the easiest waffle recipe ever: Vegan apple strudel puff pastry waffles!

All you need is puff pastry, cinnamon, apples and some agave! It’s actually one of the easiest recipes I’ve ever posted! Otherwise Easiest recipe ever!

They come together in about 8 minutes, which is totally crazy for waffles! Maybe now you ask yourself: “Is puff pastry vegan”? Luckily, there are actually a lot of vegan puff pastry brands out there. Most refrigerated raw puff pastry sheets contain only flour, margarine, salt, water, and yeast, so they’re suitable for vegans. However, this can depend on where you live and the grocery store you’re at, so be sure to check the ingredients list. Peta got one list of things that are “accidentally” veganwhich might help you a bit with this.

Puff pastry waffle or puff?

So now back to these super easy vegan apple cinnamon waffles! I actually thought about calling them “puffles”, like puff pastry waffles and I thought that was super creative!! So, being all proud of myself for coming up with such a brilliant keyword, I put puffles into Google’s keyword planner (which lets you pick good keywords for your recipes, so people can actually find them when they google) and got tons of results. I got excited enough already, but then I noticed that puffes actually are “little furry animals” in a game called Club Penguin Island. Haha! So much for that!

As I mentioned, the recipe for these vegan filled waffles couldn’t be simpler. Best of all, you don’t even have to make a batter! I unrolled the puff pastry and cut it into three 5×10 inch rectangles, which worked perfectly for my waffle maker. Since they’re all different sizes, it’s perhaps best to measure the cooking surface of your waffle maker before you begin. Then cut each piece of dough to the same width as your waffle maker but double the length.

Then cut an apple into thin slices and place them on half of the rectangle of dough. If you want, you can also add some raisins to make the apple strudel more authentic. I left them out because I don’t really like them. Sprinkle the apples with a little cinnamon and agave. Fold over the other half of each piece of dough and seal the edges.

Then heat up the waffle iron and lightly grease it with a little oil, such as coconut oil. Cook until browned. This will probably take about 5 minutes depending on your waffle maker.

That’s all! I told you it was super simple, right? We enjoyed these easy apple waffles (or rather apple puffs) with some blueberries, vegan vanilla ice cream, and prunes. It was really good!

We also made a batch of them with bananas, chocolate and peanut butter and they were amazing too!! My boyfriend, Flo, told me he would love me even more if I made him these waffles every day. Haha! He even came up with a genius video on Youtube called “6 unique meals using a waffle maker“. These guys make a falafel burger in a waffle maker! How crazy is that?! Can’t wait to try it though!
