Blueberry ice cream with 2 ingredients

Dear summer, where are you?! Please come back!! It has been raining almost continuously for days and we have also had severe flooding in some parts of Germany. I can’t wait for it to be over so I can finally spend some time outdoors and get back to jogging. But in the meantime I needed to have at least some summer, so I made some 2-ingredient blueberry ice cream with coconut flakes, fresh berries, and granola on top.

Best of all, you only need two ingredients to make this vegan blueberry ice cream: Frozen bananas and blueberries. No need to add any sugar, dairy or anything else!!

The riper the bananas, the better, as they will make the berry ice cream even sweeter. Just cut the bananas into slices and freeze them for a couple of hours, or better overnight. Then put them in a blender along with the frozen blueberries and process until smooth. Use the pulse function and scrape the sides as needed. I used frozen wild blueberries from Canada, which are my absolute favorite, but of course you can also freeze fresh blueberries for a couple of hours.

I absolutely LOVE that this vegan blueberry ice cream is so healthy you can also eat it for breakfast. I mean ice cream for breakfast, how good is that?!

Blueberry ice cream is definitely my favorite, but it’s also great with frozen raspberries or strawberries.

I’m pretty busy with my dissertation writing right now, so I really appreciate a quick and healthy treat like this 2-ingredient blueberry ice cream for a little break. Flo is studying for her final exam (law) in August, so our lives are actually a bit boring and one sided right now. But at the same time it’s also super cool that we can work a lot from home and have lunch together and stuff like that. And we just booked a trip to Bali last weekend!!! We got a great deal and I’m sure we’re going to have a blast after all this studying! The flights are pretty awful (32 and 35 hours and two stopovers in Paris and China…), but I can’t wait to spend two weeks there in the sun! We went to Thailand last year and loved it. We rented a scooter and it was so easy to get around and visit temples, explore waterfalls and spend time at remote beaches. Oh and let’s not forget about the snorkeling and all the delicious food we ate! Oh seriously can’t wait for our next trip to SE Asia!! <3

Oh, and aren’t these ice cream cups cute? I actually have loads of cups, plates and bowls and I’ve even had to make room in our living room because our kitchen cabinets are crammed full of all my cooking utensils. But I couldn’t say no when I saw them. And I guess I’m not the only food blogger who is addicted to cute dishes and other things related to cooking, right?!
