Guys, I have a new favorite breakfast: Carrot cake overnight oats with chia seeds, walnuts and coconut flakes. I make overnight oats at least two or three times a week and I love this new version! Like all the recipes I post on Vegan Heaven, of course it is completely vegan. Plus it is gluten free, incredibly easy to make and super healthy! If you haven’t tried overnight oats yet, you really should give them a try!

Overnight oats are just oats that are soaked overnight in milk. I usually use rolled oats, chia seeds, almond milk, a banana and cinnamon puree and in the morning I season with some berries. So good and easy! And it literally only takes 1 minute to make the night before.

So overnight oats are the perfect breakfast for me! Incredibly easy, packed with protein and fiber, and super versatile! I guess it’s fair to say that they are the Easiest breakfast ever! I also like to add a little cocoa powder every once in a while or even peanut or almond butter. It actually tastes like breakfast pudding like this.

I usually add a tablespoon or two of chia seeds because keep hunger at bay all morning. More, they contain an incredible amount of nutrients without having a lot of calories. The recipe for this overnight carrot cake is super simple. Just combine oatmeal, Chia seedsAND grated carrots in a bowl, add some almond milk, vanilla and cinnamon and leave it in the fridge overnight. If desired, it can also be sweetened with agave or maple syrup. In the morning, complete it with chopped walnuts, coconut flakes, and if you want with more grated carrot.   • In a bowl combine all ingredients except the nuts and coconut flakes. Cover and refrigerate overnight until the almond milk is fully absorbed.
