Peach Overnight Oats – Cozy peach cuisine

These ultra-creamy rolled oats are inspired by peach cobbler flavors but made with simple, wholesome ingredients! They’re ready in just 10 minutes and perfect for meal prep.

It’s the season for all things fishing! That means peach smoothies, peach bars, and definitely peach overnight oats on warm summer mornings. These oatmeal rolls are inspired by the peach cobbler but made with wholesome ingredients.

What will you need

Labeled ingredients used to make Peach Overnight Oats
  • Oatmeal, also known as old-fashioned oats. Steel cut oats and instant oats don’t work here.
  • Milk of your choice: Unsweetened, unflavored soy milk is my favorite, but any kind works here.
  • Peaches: Choose ripe peaches. I leave the skins on but you can remove them if you prefer.
  • greek yogurt: I like to use peach-flavored Greek yogurt for an extra peach flavor! Vanilla is also a good option and just works if you want to cut down on added sugars.
  • Pecans: I use whole pecans and coarsely chop them, but you can also purchase chopped pecans to save prep time. Walnuts are fine too. Omit the pecans for this recipe without nuts.
  • Brown sugar can be omitted if you prefer naturally sweetened oats. Maple syrup and honey are also great options, but I recommend adding them directly to the oatmeal instead of sautéing the peaches.
  • Cinnamon powder AND ginger they are two spices that go wonderfully with peaches!

Step by step instructions

I like to use the size of a wide mouth pint ball jars as containers, but any glass or medium sized container will do.

If you are preparing multiple portions it’s easier if you mix the ingredients directly in the jars instead of mixing them together in a large bowl and dividing them among the jars.

Steps 1 to 4 to prepare overnight oats

First step: To each jar add the oatmeal, the spices, the Greek yogurt and the milk.

Step two: mix to combine.

Phase three: To prepare the peaches, heat a small skillet over medium-low heat. Once hot, add the peaches, brown sugar, and pecans. Cook for 3 to 4 minutes, stirring often, until the peaches are softened and the pecans are toasted. This makes the peaches softer and juicier than if you add them directly to the oatmeal.

Save half of the peaches for garnish the next morning or go ahead and mix them all in the jars.

Phase four: Cover and refrigerate the jars for at least 4 hours before enjoying them.

  • Make it vegan: Replace Greek yogurt with your favorite vegan yogurt. Yogurts made with soy and pea protein are generally higher in protein. Choose a plant-based milk such as soy, almond or oat milk.
  • This recipe works with any stone fruit (plums, nectarines, etc.).
  • Healthier add-ons: To each jar add 1 tablespoon ground flaxseed or chia seeds for healthy fats. It will also thicken the oats even more.
Do you eat overnight oats cold or hot?

In the summer I prefer them cold but you can warm them up if you prefer warm oatmeal. Heat over medium-low on the stovetop or heat in the microwave until warmed through, about 1 to 2 minutes.

How long do they keep?

Overnight oats are best enjoyed within 3 to 4 days. Keep refrigerated.

How long should I wait before eating overnight oats?

For soft oats wait at least 4 hours after refrigeration. This gives the oats time to absorb the liquid and soften. They will get softer the longer they sit.

Can I freeze these?

I haven’t tried freezing oats overnight, but I don’t think that would work well.

Can I use frozen peaches?

Decidedly! Let them thaw completely before using them. I’d put them in the microwave to do this, but you can also let them thaw in the refrigerator.

Peach Night Oats

Peach Cobbler-Inspired Overnight Oats are creamy and so easy to make with just a handful of ingredients.

Instructions

  • In a pint sized ball jar or similar sized container, mix together the rolled oats, soy milk, Greek yogurt, cinnamon and ginger.
  • Place a medium-large non-stick pan pan over medium-low heat. Add the diced peaches, pecans and brown sugar. Stir to combine. Cook over medium-low heat for 3 to 4 minutes, until the peaches are softened and the pecans are lightly toasted.
  • Stir the peaches and pecans into the oats. Optionally save half for the topping.

  • Cover and refrigerate for at least 4 hours before enjoying. It keeps for 3-4 days. Enjoy cold or hot.
