Zucchini Muffins?! I know it sounds a little crazy, but it’s really delicious!!

I have to admit I was quite skeptical when I first tried baking with zucchini a couple of months ago. But when my zucchini carrot muffins turned out to be so moist and delicious, I had to make another batch, this time with chocolate. So I ended up with these Peanut Butter Chocolate Zucchini Muffins. In reality they are not just chocolate muffins, but double choc!! I used both cocoa powder and chocolate chips.

This is truly like chocolate heaven!! All vegan of course!

They’re super moist, chocolaty, sweet, and even a little crunchy!

To add some more of this vegan delicacy, I drizzled them with some peanut butter (who can say no to a peanut butter curl, right?) and some crushed peanuts. Flo always loves it when I cook (she’d probably love me even more if I changed my blog to a cooking blog. Haha! No, just kidding), and I had to hide these muffins from her or she’d eat them all at once. He can really go crazy for sweets. But well, who am I to deny a grown man his peanut butter muffins, right? 😉

And I have to admit, it’s also pretty cool that I love all the things I do.

I still remember when we moved in together almost six years ago (wow time really flies!!) and we both didn’t know how to cook at all! I mean, we were proud when we managed to make pasta with tomato sauce. No, I’m exaggerating, but you get the idea. 😉

And now I have a cooking blog and cooking has become one of my greatest passions! I haven’t had any real hobbies other than traveling and reading for years. Sounds pretty boring, doesn’t it? But as a child I was not fond of sports or music.

I took dance lessons for a while and played the flute, but I didn’t really like dancing. And I actually hated my flute, so I was so happy when my mom let me drop out of lessons.

A couple of years ago, we watched a family video of me playing the flute when I was about seven or eight and oh my god, I was seriously lost for words. It was fun!! Everyone was clapping and telling me how good I was, but it was actually really bad. Haha!

So I’m so glad I finally found something I’m really passionate about!

I love inventing new vegan recipes, cooking them and then taking pictures!

I could seriously do this all day! And of course I also like to eat all these delicious vegan things I’ve made. I never imagined that vegan food could be so delicious and creative!

But let’s get back to the vegan chocolate muffins. They are really easy to make and only take about 25 minutes. To sweeten them I used coconut sugar, but you can also replace it with brown sugar if you like. And of course you can also replace the almond milk with any other plant-based milk.

Instructions

  • Combine ground flax seeds with water. Mix well and let it rest for about 3-5 minutes.

  • Meanwhile, combine the rest of the ingredients (except the peanut butter and peanuts) in a medium bowl. Gently mix with a wooden spoon until well blended.

  • Place the cups in a muffin pan and divide the mixture evenly. Mix in some peanut butter and top each muffin with some peanuts.

  • Bake for about 15 minutes at 180°C. Leave to cool in the muffin pan for at least half an hour.
