I’m a little nostalgic these days. I just can’t believe that summer is already over. When I returned home after two weeks of sunshine in Thailand on Monday, I was shocked by the cold and rain. On the plus side, pumpkin season is finally here!!! So a big YAAAY to that! These super easy vegan pumpkin spice breakfast cookies I had the other day definitely cheered me up. And look forward to more pumpkin recipes, hearty stews, and all other delicious fall recipes.

We had the cookies along with a huge pumpkin spice almond latte, so the breakfast couldn’t have been better. I rarely drink coffee — I just don’t like its bitter taste — but I’d probably die for the pumpkin spice latte. Like most people, I first tried the pumpkin spice latte at Starbucks, but I think this one is much better and contains real pumpkin.

For the Pumpkin Spice Breakfast Cookies I used my usual pumpkin spice blend: 1 tablespoon cinnamon, 1 teaspoon ginger, 1/2 teaspoon nutmeg, and 1/2 teaspoon ground cloves. The recipe couldn’t be simpler and is ready in less than half an hour.

You just need a medium bowl, oats, a mashed banana, soaked flaxseeds, pumpkin puree, almond milk, agave, pumpkin seeds, and cranberries. I also added two tablespoons of popped amaranth, which gives them an extra charge of iron. If you can’t find popped amaranth, you can also substitute almond meal for it.

Instructions

  • Soak the flax seeds in 4 teaspoons of water for about 3 minutes.

  • In a medium bowl, combine all ingredients except the pumpkin seeds. Stir in the soaked flaxseed.

  • Form 6 to 8 biscuits and line a baking sheet with baking paper. Sprinkle the cookies with the pumpkin seeds.

  • Bake in a 350 degree F oven for 20-25 minutes.
