You may have already noticed that toast looks a lot more orange these days, especially on Instagram. Well, that’s because they’re not made of bread but of sweet potatoes. Sweet potato toast?! Yes, you heard right. And I guess that explains the color orange too, right? This new trend is not alone super healthy but also insanely delicious! And it couldn’t be easier. Simply pop slices of sweet potato into the toaster oven and then slather the sweet potato toast with your favorite toppings. It really is that easy. You can use sweet potato toast like any other type of toast or bread. And its completely vegan and gluten-free!
I love the subtle sweetness of these sweet potato toasties. It’s not too sweet, so you can still use any hearty toppings like avocado or tofu. But it definitely adds a nice flavor. Plus, sweet potatoes are super healthy and contain tons of nutrients. Combine sweet potato toast with some nut butter and other superfoods like avocado or chia seeds and you’ve got an extremely nutritious breakfast or snack.
My favorite toppings for sweet potato toast are:
– peanut butter and bananas
– avocado, watercress and cherry tomatoes
-vegan cream cheese, chilli flakes and watercress
– vegan chocolate spreadable cream with blueberries and bananas
-almond butter with cinnamon
– vegan cream cheese with raspberry puree
But there are so many options. You could also use:
– tofu or tempeh
-mustard, cucumber, sprouts and chia seeds sprinkled
– scrambled tofu with vegetables
– pesto and cherry tomatoes
-tahini and goji berries
Be creative and see what you end up with…
How to make sweet potato toast:
–Large round potatoes they work best for these sweet potato toasties.
-Slice your sweet potatoes vertically Slices 1/4 inch thick. Don’t make them too thick as they won’t cook through completely.
-You can peel the sweet potatoes or just leave the peel on. I usually don’t mind the skin, but it’s totally up to you. It works both ways.
-Turn the toaster until high and toast sweet potato wedges for 2-3 rounds or about 5 minutes.
-You can store extra slices in an airtight container in the refrigerator for up to a week. Just warm them up in the toaster again.
