The other week, one of my readers asked if I could share some healthy and easy vegan breakfast recipes. Then I realized that I really needed to blog some everyday breakfast dishes. I mean, the tofu scramble, pancakes, and banana quinoa bread are great, but sometimes we just don’t have enough time for a fancy breakfast. So this might be the perfect time for these super easy vegan chocolate zoats with berries and bananas.

For those of you now wondering what zoats are: no, it’s not a new slang word that kids use, it’s short for zucchini and oats. Zucchini and oats?! This might sound even weirder than zoats, right? Haha! If you’ve been following my blog for a while, you probably know that I love sneaking some veggies into all kinds of dishes.

Beans in brownies and donuts? No problem!

Zucchini in muffins? Check!

Vegan Chocolate Zoats

So when I first heard about zoats (it’s quite popular on Instagram), I had to give it a try!

It is made of chopped zucchini, oats and milk. To make it vegan I usually use almond or oat milk, but other types of plant-based milks work just as well. I also added some cocoa and chia seeds and topped with almond butter, coconut flakes and more chocolate.

I always try to use as little sugar as possible, so I added a mashed banana to the vegan chocolate zoats instead of sugar. It works great in other desserts, too (for more, check out my recipe for Gingerbread Avocado Chocolate Mousse). If you want it to be a little sweeter, you can also blend the banana with a couple of dates or add a teaspoon of agave.

I love healthy breakfast bowls like this one. Not only are they super easy to make, but they’re also so yummy and cute with all the different colors!

Instructions

  • Place the chia seeds in a small bowl and add 6 tablespoons of non-dairy milk. Leave to thicken while preparing the rest of the zoats.

  • Put the oats, the chopped courgettes and the almond or oat milk in a saucepan and cook for about 5 minutes over medium heat.

  • Then add the mashed banana, cocoa, soaked chia seeds and, if using agave.

  • Place in two bowls and garnish with fresh berries (I used blueberries and raspberries), bananas, kiwis, almond butter, coconut flakes and chopped dark chocolate.
