This Vegan Banana French Toast is such a delicious and easy weekend breakfast! It’s moist, sweet, filling, and ready in just 5 minutes!
Why this recipe works
Traditional French toast consists of slices of bread that are soaked or dipped in egg and milk and then fried in butter or oil.
Luckily, it’s pretty easy to make vegan French toast without dairy and eggs. It turned out super moist, sweet, and is perfect for the weekend.
For my recipe I used a batter composed of mashed bananas, almond milk, cinnamon and natural vanilla extract.
Mashed banana serves as a great egg substitute in this recipe. And at the same time it’s also a fantastic sweetener.
I tried different types of oil for this recipe. My favorite by far was the coconut oil. It worked best to get the french toast nicely browned. And it also added a great coconut flavor, which blends perfectly with the rest.
Cinnamon and vanilla extract add a nice flavor. Serve it with some maple syrup, vegan butter and fresh berries for maximum flavour.
I love that this recipe only requires very few ingredients. And you can find all the ingredients in any regular grocery store.
What goes in this recipe:
- Banana – make sure it is ripe (it should have quite a few brown spots). The riper it is, the sweeter it is.
- Bread – I prefer crusty white bread. It may have a couple of days.
- Almond milk – I usually use unsweetened vegetable milk. Soy or oat milk works too.
- Coconut oil – Adds a light coconut flavor.
How to make this recipe:
1. Pass: Cut the bread into thick slices.
2./3. Take a step: Mash the banana with a fork in a shallow bowl.
4. Pass: Add the almond milk together with the cinnamon and vanilla extract.
5./6. Take a step: Then dip each slice of bread into the banana-almond milk mixture for about 10-15 seconds.
7./8. Take a step: In a large skillet, heat some coconut oil over medium heat and cook each side until golden brown. For me, it took about 3-4 minutes per side.
Notes on the recipe:
- Make sure you use ripe bananas. They are much sweeter.
- It is best to use stale bread. It will absorb more batter without falling apart. Stale bread is fine too, but I wouldn’t recommend using freshly bought bread.
- I like this recipe with coconut whipped cream and fresh berries best.

This French toast is best served chilled. However, stored in an airtight container in the refrigerator, it will last 2-3 days.

Chill your coconut cream in the refrigerator overnight (be sure not to shake it so the cream and liquid stay separate).

Mash the banana with a fork in a shallow bowl and add the almond milk along with the cinnamon and vanilla extract.

Then dip each slice of bread into the banana-almond milk mixture for about 10-15 seconds. In a large skillet, heat some coconut oil over medium heat and cook each side until golden brown. For me, it took about 3-4 minutes per side.

Prepare the coconut cream: put the hardened cream in a mixing bowl. Beat for 30 seconds with a mixer or until creamy. If you like it you can add some agave or a sweetener of your choice.

Serve the vegan french toast with coconut cream and berries.
